What You\u2019ll Need<\/strong>
\n1 Lavash
\n1 Bunch chives
\n1\/2\u00a0Cup Greek yogurt
\n3\/4\u00a0Cup store bought hummus
\n1\/2\u00a0Tsp beetroot powder
\n1\/4\u00a0Cup radicchio
\n1\/4\u00a0Cup corn kernels
\n1 Can of beets, sliced into \u00bd” strips
\n2 Tear-drop tomatoes sliced in half
\n1\/2\u00a0Yellow bell pepper
\n1\/2 Orange bell pepper
\n1\/4\u00a0Cup purple cauliflower, cut into small florets
\n2 Tbsp pomegranate seeds
\nParing knife
\n1″ Star shaped cookie cutter
\n1″ Heart shaped cookie cutter
\nPlastic bag or piping bag
\nMixing bowl<\/p>\n

How to Make<\/strong><\/p>\n

Note:\u00a0<\/strong>Use photos for reference when shaping ingredients and arranging them on the platter.<\/p>\n

\"Shimmer<\/p>\n

Step One:<\/strong> Prep your ingredients:<\/p>\n

In a sandwich bag, mix 1\/4 cup of the hummus with the beetroot power, setting aside remaining 1\/2 cup of hummus for later. Snip a tiny corner off the sandwich bag\u00a0to use for piping.<\/p>\n

Cut 3\/4\u00a0of the bunch of chives into 2″ pieces.\u00a0Finely chop the remaining quarter bunch.<\/p>\n

Tear the radicchio leaves into small, square-shaped pieces.<\/p>\n

Use the cookie cutters to cut hearts out of the yellow pepper and stars out of the orange pepper.<\/p>\n

Step Two:<\/strong> Mix the yogurt, hummus, and finely chopped chives together, then spread the mixture onto the lavash. Place the lavash on a platter and tuck the 2″ chive pieces under the two shorter sides of the lavash.<\/p>\n

Step Three:<\/strong> Assemble the torn radicchio leaves on the lavash. Leave a small rectangle in the middle empty, then fill it with the cauliflower florets. Top the cauliflower rectangle with the bell pepper hearts and stars.<\/p>\n

Step Four:<\/strong> Outline the radicchio with the sliced beets, leaving a small space\u00a0at each corner. Place a halved tomato in each corner space. Line the inside perimeter of the beets with green peas.<\/p>\n

Step Five:<\/strong> Pipe the beet hummus in a swirly pattern around the outside edge of the lavash.\u00a0Decorate around the beet hummus with the\u00a0corn kernels and pomegranate seeds.<\/p>\n
